Delicious fall vegetable mixture

I use a similar recipe, but I add diced sweet potatoes and 1lb browned sausage.

Cube 1 butternut squash in 1" cubes

Cube enough apples, Granny Smith, Rome, or Golden Delicious are suggestions, to equal the amount of squash
1/4 to 1/3 cup brown or white sugar
1/3 stick butter or margarine (butter tastes better)
1 tsp pumpkin pie spice mix (or 1/4 tsp cloves, 1/2 tsp cinnamon, and scant 1/4 tsp allspice)
1/4 cup chopped pecans or walnuts
1/4 cup seedless raisins

Mix in stick free pan or Corning Ware baking dish, well sprayed with Pam

Bake 15 minutes at 350 degrees, remove from oven and stir well
Return to oven and continue baking until squash is tender. A tooth pick or a taste will tell you when it is done.

Serve hot, warm, or cold as you prefer.

A little whipped cream or Cool Whip helps make it a little more festive.

Leftovers, if any, will keep well.

(BTW, one in my family prefers Craisins over raisins. Your choice.)
