Maybe it's just a matter of where, when and how you grew up?
When I was a kid, if it was put on the table, you either ate it or you went hungry. If you got it served to you on a plate buddies you better eat it or face the switch. Lots of things I hated as a kid but as I have grown up, I like trying all sorts of foods and I have found that most I enjoy now!
I've not seen anything on this tread as of yet that I haven't tried and for the most part I like most of these foods.

I like eggs for the most part, but, I will not eat an egg if the white is not completely done. Yolks a little soft are ok, but, no undercooked whites...a real deal breaker.

I've never had livermush, but it sure doesn't look appealing.

Jenkins makes Livermush while other meat processers make Liver Pudding, but, it's the same thing. I see Liver Pudding all over the south, as well as Bell's Sausage, but neither in the north and points westward. Boudin is in the Cajun areas...and they can keep it there!
I like Livermush if it is fried to a hard outer crust. I can eat okra if it is fried hard. But both are not as appealing if left mushy or slick/slimy. So it may be how it was fixed as to whether you like it or not.

Bell's sausage, potted meat (or as I like to call it potted dog), boudin, chittlings, souse meat, lima beans, water chestnuts, and oyster stew (look like a bowl of snot).
