A cashier can't do cash back on their own. Cash back requires the PIN number to be entered and for the cardholder to verify the total is correct.
This is a BS story.

First of all, why would you use a credit card for a purchase of $4.87? Second, most stores don't take credit cards if purchased under $5.00. Third, if you use a CC always ask for a receipt. Fourth, why wait until now to bring it up 7 days later. Fifth, can you show this is your mom receipt, not someone elses? Sixth, Why if the cashier ask her if she wanted a receipt, then trying to insisted changing her mind about it?

I have to admit, when the story says they bought pork skins, a Coke, and an apple danish, but then the receipt says 2 gallons of gas, it makes the whole story questionable.
There was a rumor going around awhile back about cashiers at Walmart doing the same thing, but Snopes found it to be false:

Yes. The receipt shows a purchase of gasoline for $4.87 not food.

This happened to a friend of mine, and I'm just passing it along to warn others.
Last week, my mom stopped by foothills grocery to grab a quick snack before heading back up the mountain. She purchased a small bag of pork skins, a coke and an apple Danish! The total came to 4.87 and the cashier kept asking her if she wanted a receipt. Even though mom said yes multiple times the cashier insisted on mom changing her mind. But after arguing with her about it she finally received the receipt and as she was walking out the door she happen to glance down at the receipt and noticed she was charge 24.87...$4.87 for the food and $20 cash back. Apparently foothills grocery thinks they can scam people and pocket the cash back. Mom also had mentioned she remembered hearing the same cashier asking another man the same thing. She didn't get the cashiers name although she was red headed with real light skin. I'm not sure why people think this is okay, and we want other people to know about this to avoid any future mishaps.
