Quick appetizer

Reuben Dip

1 Block cream cheese (softened)
1/2 cup sour cream
1/2 cup Thousand Island dressing
16 oz can sauerkraut (rinsed and squeezed dry)
8 oz shredded corned beef
8 oz shredded mozzerella cheese
8 oz shredded parmesan cheese (original recipe called for 16 oz shredded Swiss cheese, but I was lazy and didn't want to shred it myself)

Preheat oven to 350
Combine cream cheese, sour cream and dressing
Spread sauerkraut into a large casserole dish
Layer corned beef then cheese
Spread the cream cheese mixture on top
Bake for 20-25 minutes

We used wheat crackers and little rye bread slices to dip.
Enjoy!

I made the taco cheeseball that allee posted. It was quick and I had the ingredients here already. It was a hit! None to bring home.
I also had the ingredients for a Reuben dip that I had found on a website a while back so I made it. It was a big hit too! Several men asked their wives to get the recipes so I guess that meant they liked it.

Thanks to EVERYONE who posted a recipe. I have copied them ALL and know that I will have to use them with football season coming up. We have aftergame parent parties on Friday nights where we have "refreshments" with no children around.

I know you don't need this now, but here is an easy one for next time. It is really simple. We have made them for snacks twice this week.


Ham and Pickle Rollups Recipe

Ingredients

3 packages cream cheese, softened

1 pound ham, thinly sliced

1 quart dill pickles, drained, patted dry.





Directions

Place pickles on a paper towel to dry off some of the juice. Carefully spread the cream cheese on a 2 slices of ham. Roll a pickle up in the ham slice and roll again with the other ham slice. Slice into 1-inch pieces. Repeat as necessary. Refrigerate at least 2 hours before serving.

Try this:

Taco Dip

Mix one pack of taco seasoning with one (8 oz) softened cream cheese. Spread in a dish/pie plate. Top with 1 jar Salsa (hot, med or mild), shredded lettuce, shredded taco cheese (or whatever you like), chopped tomatoes and small dollups of sour cream. Cover w/tin foil and heat for 15-20 minutes on 350* . Serve with tortilla chips.
You can also add refried beans and/or browned and drained ground beef, just put one or both on before the salsa. I ususally top with extra shredded cheese and any leftover salsa.

Pico de Gallo (Peck of the Rooster)
15 roma tomatoes (or equal)
1 onion
3 jalapenos (seeds in for hot)
juice of one lemon
1 bunch cilantro
Sat and pepper to taste
1 Tbs Oil
1 Tbs Vinegar
4 or 5 garlic cloves (minced)
The best way to do it is put it all in a food processor
or you can cut it all into little pieces by hand
Wear hand protection and wash well after handling peppers.
A large bowl for Salsa and large bowl of Tortilla chips.
Simple and Great .

You could always make a quick fruit salad with fresh cantaloupe, strawberries and blueberries. Just cut them into small pieces and place in a bowl, this combination is pretty all on it's own.

I lke fresh salsa like you get at the deli section at Lowes Foods or Harris Teeter then just add chilled boiled shrimp for a spicy salsa shrimp dip that's great with colored tortila chips. Yolu can always make your own salsa or just add the freshly chopped tomatoes, peppers and shrimp to your favorite jar of salsa.

Everyone always asks me for this recipe when I take this to potlucks. You can make it as spicy as you want just by adding really hot salsa.

Mix together:

4 cups frozen sweet corn (thawed)
1 cup canned black beans ( drain and rinse well)
2 cups of your favorite salsa
1 bunch of chopped green onion
1 avocado cut into small pieces
Juice from one lime
1/3-1/2 cup chopped fresh cilantro (to your taste preference)

Allow to chill in refrigerator for as long as you can.


Fill by the spoonfuls into those little tostitos chips that are shaped into bowls. Arrange on a platter. Everyone always loves these!

cheese dip, easy simple and so good, go to grocery pick up a couple of jars of Tostito brand, Queso dip with monterey jack cheese , nuke it for a few seconds in a bowl and let them dip away. its the closest thing to an authentic mexican cheese dip i have found. its spicey but not overwhelming.
