I usually make my meatloaf up and then patty it out and fry like burgers...cuts down on oven being on so long and heating up the house.

I tried NM's bacon-mushroom-swiss, using sweet onion instead of white. It was a hit!! I will be using this again.

1 cup chopped onions
1 cup chopped green pepper
2lbs ground beef
2 eggs
2 cups bread crumbs

Mix all ingredients, top with ketchup. bake at 400 for an hour

EASY TURKEY MEATLOAF


1 lb. ground turkey
2 eggs
1/4 c. ketchup
1 sm. onion, chopped
1/4 tsp. pepper
1/2 tsp. parsley flakes
1 1/2-2 c. oatmeal
1/2 c. milk


Mix all ingredients, except oatmeal and milk, together in a large bowl. Then stir in oatmeal until desired consistency (using your hands is easier to mix). Place the mixture in a 2 quart baking dish. Shape with your hands to make an oval, not allowing the loaf to touch the sides. Pour the milk over the meatloaf mixture. Cover the dish with aluminum foil or lid. Bake at 350 degrees for 45 minutes, uncover and bake for 10 more minutes. Makes 6-8 servings.

BASIC TURKEY MEATLOAF


1 lb. ground turkey
1/2 c. seasoned bread crumbs
1/3 c. chopped onion
1 egg, beaten
1 tsp. Worcestershire sauce
1/2 tsp. garlic powder
1/4 tsp. dry mustard


Mix and place loaf in a greased baking dish for 1 hour at 350 degrees.

TURKEY MEATLOAF


1 tsp. oil
1 c. chopped onions
1 stalk celery, chopped
3/4 tsp. dried thyme
1/2 tsp. dried sage
1 lb. ground turkey
1 1/2 c. peeled, grated apples
1 1/2 c. fresh bread crumbs from firm bread
1 lg. egg, lightly beaten
2 tbsp. chopped fresh parsley
1 tbsp. Dijon mustard
3/4 tsp. salt
1/2 tsp. freshly ground pepper


GLAZE:


1 tbsp. cider vinegar
1 tbsp. brown sugar
1 tsp. Dijon mustard


Heat oil in a small skillet over medium heat. Add onions and celery and saute 3 minutes or until softened. Stir in thyme and sage and let cool slightly. Combine onion mixture in large bowl with turkey, bread crumbs, apple, egg, parsley, salt, mustard and pepper. Mix well. Pack into a greased 8 x 4 inch loaf pan. Bake at 350 degrees for 30 minutes. Pour off any fat.

GLAZE: Combine ingredients in small bowl and brush over top of loaf. Bake 30 minutes more or until golden and juices run clear when pierced.

EXTRA LEAN TURKEY MEATLOAF


1-2 packages extra lean ground turkey
2 eggs
packaged bread crumbs
barbecue sauce
1/2 cup green bell pepper
1/2 cup onion
1/2 cup mushroom


Combine meat, eggs and barbecue sauce to your liking. Mix well. It's easiest to do with your very own hands! Add other ingredients, some like less some may like more!

Slowly add bread crumbs to thicken the loaf.

Be careful - adding too much will mean you'll need to add more egg and barbecue sauce.

Bake until thoroughly cooked usually about 45 minutes at 350�F. But keep an eye on it as it is extra lean so it cooks faster and will dry up. Makes great sandwiches the next day on a French roll with extra barbecue.

QUICK AND EASY MEATLOAF


1 lb. ground beef
1/4 c. chopped onions
1 slice white bread
1 egg, beaten
Ketchup
Salt and pepper


Preheat oven to 325 degrees. Combine ground beef and chopped onions. Soak bread in beaten egg. Combine with beef and onion. Shape into loaf. Top with ketchup, salt, and pepper. Bake at 350 degrees for 1 hour.

Meat Loaf Muffins

1 teaspoon olive oil
1 cup finely chopped onion
1/2 cup finely chopped carrot
1 teaspoon dried oregano
2 garlic cloves,minced
1 cup ketchup,divided
1 1/2 pounds ground beef
1 cup finely crushed fat free saltine crackers (about 20)
2 tablespoons prepared mustard
1 teaspoons Worcestershire sauce
1/4 teaspoons freshly ground black pepper
2 large eggs
Cooking spray

Preheat oven to 350 degrees. Heat the olive oil in large nonstick skillet over medium-high heat.Add chopped onion,chopped carrot,dried oregano and minced garlic;saute 2 minutes. Cool. Combine onion mixture,1/2 cup ketchup, and remaining ingredients except cooking spray in a large bowl. Spoon the meat mixture into 12 muffin cups coated with cooking spray.Top each with 2 teaspoons ketchup. Bake at 350 for 25 minutes or until a thermometer registers 160 degrees. Let stand for 5 minutes.

Barbeque Meat Loaf
1 1/2 pounds ground beef
1 cup fresh bread crumbs
1 onion, diced
1 egg, lightly beaten
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 (8-ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup water, to thin sauce if necessary
Preheat oven to 350 degrees F.
Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf. Bake for 1 hour, basting every 15 minutes with the pan juices.

Bacon Mushroom Swiss Meatloaf
----
INGREDIENTS:
12 ounces chopped raw bacon
1 small white onion, chopped
5 button mushrooms, chopped
1 1/2 pounds extra-lean ground beef
1 egg
1/4 cup evaporated milk
6 ounces shredded Swiss cheese, divided
1/2 cup corn flake crumbs

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Place bacon in a skillet and cook over medium heat until the pieces are browned. Remove with a slotted spoon to paper towels. Discard all but 1 tablespoon of bacon grease. Stir in onions and mushrooms, and cook until soft. Remove from heat.
In a large bowl, stir together beef, egg, and milk. Stir in the onion and mushrooms. Mix in about 4 ounces of Swiss cheese, and all but 1 tablespoon of bacon. Stir in cornflake crumbs, and mix until well blended. Shape into a loaf, and place in a meatloaf pan.
Bake in a preheated oven for 1 hour. Drain fat, and sprinkle with remaining cheese and bacon. Return to oven, and bake until cheese is melted, about 5 minutes

Meatloaf
4 T. butter
1 chopped onion
1 stalk celery
1 chopped green pepper
1 t. meat seasoning
1 T. Worcestershire sauce
1/2 C. evaporated milk
1/2 C. ketchup
1 1/2 lb. hamburger
1/2 lb. pork sausage
2 eggs
1 C. bread crumbs or 1 pkg. stuffing
2 t. minced garlic
brown sugar to taste
1 can tomato sauce
garlic powder to taste
1 can mushrooms
Preheat oven to 350�. Melt the butter in a large saucepan over medium
heat. Add the onion, celery, meat seasoning, Worcestershire sauce.
Cook stirring occasionally and scraping bottom of pan until the
mixture starts sticking about 6 minutes. Stir in the milk and
ketchup. Continue cooking for about 1 minute stirring occasionally.
Remove from the heat and allow to cool at room temp.
Place the hamburger and sausage in a large mixing bowl. Add the
eggs, cooked mixture, bread crumbs and remaining ingredients. Mix by
hand. Place mixture in an ungreased 9x13 baking dish. Shape into a
loaf making sure not to touch the sides. Bake uncovered 25 minutes.
Raise heat to 400� and continue cooking until done approximately
another 35 minutes.

1 1/2 lbs ground chuck
3/4 can (15oz) spanish rice
i egg
i piece of light bread (broken into small pieces)
small onion chopped, its your preference on this one

mix the above really well, the spanish rice provides the tomatoes, green peppers, etc and the rice helps hold it together

you can use more or less ground chuck, its your preference.

put in loaf pan or form loaf and top with a bit of ketchup or sometimes i use honey bbq sauce. bake at 375 for 45 min or until meatloaf is nice and brown and done in the middle, i dont usually make a "tall" loaf, i kinda flatten it out a bit---ha ha ha
