to me eggplant is like pasta, not a lot of taste on its own ... it's what you put on it. you can make lasagna with it too. it absorbs the tastes that its cooked with. peel it, the skin is tough.

Slice an egg plant roll them in yellow cornmeal and deep fry in olive oil. I like plenty of black pepper on mine.

Dem big mushrooms sliced thick can replace the beef on a burger. Sautee them in olive oil and garlic until tender. Good eating.

quiche is a good delivery method for all kinds of things ... ham, cheese, spinach, onions, bacon, broccoli,

same with fried rice, add all kinds of things to it
