Tre Leche Cake
Tre Leche Cake

Wonderful cake. It's hard to have only one piece.
I like to garnish with fresh fruit.

2 cups cake flour
2 cups sugar
6 eggs separated
2 teaspoons baking powder
1/2 cup whole milk
1 teaspoon vanilla
1 14 oz can Evaporated milk , Sweetened Condensed milk, lite coconut milk

3 egg whites
3/4 sugar

Grease and flour 9 13 glass pan set aside. Pre heat oven at 350 degrees
Separate eggs. Sift and combine all dry ingredients set aside.
In a slightly chilled metal bowl beat egg whites till soft peaks form.
Gradually add sugar beat till hard peaks form.
Add yolks one at a time incorporating after each addition.

Alternating dry ingredients and milk to mixture, batter volume will expand and work at steady pace while mixing. Add vanilla.
Pour into greased pan.
Bake at 350 for about 25 minutes.
Top will be golden brown. Do the standard toothpick trick.
Remove allow to cool.

While baking mix all milks some use a blender to achieve this. It's up to you.
When cake is cooled. Take a fork, and poke holes through out cake to absorb milk mixture.
Pour milk mixture over cake allowing saturation till liquid is gone.
Cover and refrigerate at no less than 4 hours, more preferably over night.

Slowly mix sugar and separated egg whites forming stiff peaks.
