BBQ slaw need recipe quick

Lexington BBQ Slaw
Classic Lexington style bbq slaw that is served
with pork in the Piedmont in North Carolina
1 lb Chopped cabbage
4Tbs ketchup
1Tbs vinegar
salt ( DO NOT ADD SALT TO SLAW 0
(use on the table when you eat salw adding salt will make it juicy)
3Tbs sugar
1/2 tsp pepper
1/2 tsp red pepper
Mix all ingredients and allow at least 20 min in the fridge before serving.
This slaw is usually served right on sandwich.

A simple recipe for bbq slaw that restaurants use and is the traditional bbq slaw as I remember follows
By the way---I spent 33 years in the restaurant business- and measure nothing- adding till it taste as desired. So hope this helps- ingredients follow.

Cabbage -(chopping cabbage too fine ruins the flavor- using one of those small hand choppers give the best results)

Approximately 3 T of fine chopped onion-add this to cabbage..
SALT AND PEPPER TO TASTE
Catsup- apple cider vinegar-and sugar- mix these together and pour over the slaw- mix well- chill-
guessing at how much but I always taste--1/2 cup catsup- 2/3 apple cider vinegar- 3 T sugar- (you may want to add 2 T of water to cut the vinegar taste) that is it. Hope this helps
Since Cheerwine was made in Salisbury area I believe- I would guess that a lot of the Lexington folks might have added a little of that---but in essense- that is the sweet part of the slaw---so Cheerwine would definately be a good addition- maybe half a bottle or less and no water- won't hurt to give it a try--if you taste of the mix before adding it to the cabbage- you can't go wrong

2 Lexington style bbq slaw receipes:

1 cup cider vinegar
1-1/2 tsp kosher salt
1-1/2 tsp white pepper
1/2 to 1-1/2 tsp red pepper flakes
1 tbsp white sugar
2 tbsp brown sugar
1/4 tsp fresh ground black pepper
1/4 katsup or chili sauce

Directions:
Mix all ingredients together. Let set for 10-20 minutes. The longer it sets the stronger it gets so you might want to moderate the red pepper and black pepper.

If you like the slaw more red then add up to 1 tbsp Hungarian paprika.

second version:

Lexington vinegar bbq sauce
2-1/2 cups cider vinegar
1/2 cup katsup
2 tbsp brown or white sugar
1 tbsp texas pete
4 tsp salt
4 tsp hot red pepper flakes
1 tsp fresh ground pepper

mix well and let set for 30 minutes.

that is the recipe i remember now that i see it, but CHEERWINE? who started you with that and what does it add to the slaw? it actually sounds like it may make the slaw. lol

i made some just a few mintues ago but it was my own recipe i didnt have all those things so i used what i had this is what i used

sm.head cabbage grated
1/2 cup cheerwine
1/4 cup heinz catsup
2 tbls.vinegar
1 tbls.sugar
salt and pepper to taste

it is good but may need a lil more catsup and cheerwine which i may still add after it has sat in the refrig. awhile

I had barbecue the other sunday and it is no longer sold at combs market or any of the grocery stores and i don't remember how mama made it. THANKS!!!!

BBQ CABBAGE SLAW


1 lg. head cabbage, shredded or finely chopped
1 green pepper, sliced paper thin or fine chopped
1 med. white onion, thin sliced or fine chopped
1 med. red onion, thin sliced or fine chopped
1 med. jar or can pimientos, chopped


DRESSING:


1 c. salad oil
1 c. sugar
3/4 c. white vinegar
1 1/2 tsp. salt
1 tsp. celery seed


Layer slaw ingredients in a bowl. DO NOT STIR! Boil dressing ingredients 2 minutes. Pour hot dressing over slaw. Cover tightly and refrigerate at least 4 hours before serving. This slaw is excellent with BBQ sandwiches or ribs or chicken. Serves 15.

can anyone tell me how to make bbq slaw like for bbq sandwichs ithink some ingredients are cabbage cheerwine stumped after that? thx
