Was raised on beans, taters, greens and cornbread. Still love me some pintos with chow-chow and cornbread. Hope you find a solution for the gas. Wish somebody could figure out how to use it to fuel the car!

smalltownman When I have a meal like that I swish a little MD 20/20 around to clear my palet. Heck I even take it out the the brown paper bag and pour it in a glass like I'm a bigshot or something.

Boil them a few minutes and after they cool set them in the fridge overnight with the lid on the pot. Rinse them the next morning before putting them in the crock pot. Navy beans have slightly more protein than pintos and soybeans have almost double the protein. Serve them with cloves of fresh raw garlic, crispy cornbread (no sugar please, we ain't making a cake), and several slices of fatback fried golden brown. If you also have some chow-chow or creasy greens then you must be Wikes County born and bred..

Wash the beans in a pot, drain the water and refill the pot with water, soak the beans over night. This is what you have to do to avoid gas.

add a good pinch of baking soda to them when they are about half cooked, stir, and watch the gasses foam up. Problem solved, and doesn't affect the flavor of the beans if you don't use too much soda.

I have heard putting them in water over night helps. But never tried, as they do not give me gas.

Fresh beans are better.I bought a 10 lb bag from the Mexican mkt.non 16/18 near the Foodlion in Wilkesboro. They cook up better because of freshness. 10 lb. For $12.95.

Put in a cup of seven-up or other carbonated drink with the beans. The carbonation removes the gas.

Take Gas X before you eat the beans. Take a big ham hock and put in the beans. Corn Bread in the Oven. Chill a good big glass of milk. And call me when its ready.

Before cooking them put them in a brown paper bag and shake them. Shaking out da gas!
