A wonderful light dish you can make at home


1/2 cup sushi rice rinsed
3 Tablespoons rice wine vinegar
1 avocado
2 sheets Nori

Sauce:
1/4 mayo
dash wasabi to taste
1 Tablespoons Ponzu sauce
1 Tablespoon sweet chili sauce


In sauce pan place rinsed rice with 1/2 cup water plus a bit extra.
it should cover rice minimally add rice wine vinegar .
Bring to boil reduce heat let simmer for 25 minutes.
Do not open lid during cooking time.
Let rice cool completely before using.
A this should be done by hand fanning the rice in a wooden bowl tradition
Improvise and let it cool.

slice avocado in half.
Slice each half lengthwise you should end up with 8 slices.


Spread half rice mixture onto one nori sheet.
lay 4 slices length wise onto rice.
Begin tight roll of muxture. Place seam side down.
With sharp knife cut roll in half, turn and place side by side.
Making 2 additional cuts you should have 6 pieces per roll total 12 in all.

For sauce taste as you go.
Mix mayo with wasabi, ponzu sauce and sweet chili a little at a time.
Until you get the taste for your palette I prefer mine on the hotter side
so I add more wasabi.
