nut'n liked a good baked possum with a apple in it's mouth....sweet tators ,turnip greens and a pon of cornbread....with persiumon pudding fur dessert....and a little whiskey to top it all off.... yummy

I have never eaten a possum, but I have actually petted a young one (Hubby was holding it!). Hubby swears that a friend of his had a pet possum! Says that they make good pets. i will take his word for it!

Husband and wife driving down the road one night. All of a sudden a Possum runs out in front of them and freezes in the light. The man does his best to dodge it but hits it anyway. The wife demands that they go back and check too see if its dead. So they go back and sure enough its dead, but they find that is has a baby possum in its pouch that's still alive. The wife says I will take this baby possum home and nurse it to health for its mom. As they are riding up the road the wife say its shivering its cold. The husband say put it between your legs to keep it warm. The wife say but what if it stinks? The husband replies put a napkin over its nose!

It is a ll according to where you live. If you live in the low lands the possums will have way too much gorgie fat. They walk around all the time on flat ground and never build the muscle tissue needed for lean meat. If you live in the high country, they will be all muscled up and too lean for cooking. You can grease them a little and it helps but dont expect much gravy. Now here in the foothills the possums are just right. Better if you can put them up for a two or three weeks and fatten them a little with cornbread and buttermilk. You will notice they grin all the time when they are happy. Thats the way when you know they are ready. Plus with a nice wide grin you can put an apple in their mouth when baking and it makes them irresistable to your guest. Hold them up by the tail and whack them in the back of the neck, (kinda like a rabbit) and hit harder because their necks are harder to break. Build a good hot bed of coals and roll the possum in the coals til all the hair is gone. Warsh them down in hot water and salt and get them as clean as you can. Go ahead now and gut them and pack them with turnips and onions. Lay them on the hearth of the far place and slow cook them all day turning them over as needed. When they are good and brown all over take a bush axe and split them kinda like a pig and parch the insides. Layer them with a little brown sugar and glaze them till ready to serve. Side dress them with the turnip greens and pitch a few sweet tators up next to them and stand back. It will probably cause a stampede if you got many people who really like possum. UMMMM UMMMM UMMMM

Actually there is a quicker and simpler recipe. Go ahead and skin possum place on oak board, pour red wine over possum salt and pepper to taste, ad Pete's red hot sauce if you like it spicy. Bake in oven for 2 hours at 450 degrees. Remove from oven let cool for 45 minutes. then toss possum and eat oak board.
