Pumpkin Bread

1 (15oz.) can pumpkin
1 cup oil
2/3 cup water
4 Lg. eggs
3 1/2 cups All Purpose Flour
3 cups sugar
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1/8 tsp cloves

2 (8 oz.) packages cream cheese, softened
1/2 cup butter, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract
pecans or walnuts (optional)

Preheat oven to 350 degrees. Grease 2 loaf pans. In a medium bowl, beat pumpkin, oil, water, and eggs at medium speed with a mixer until smooth.

In a separate bowl, sift flour, sugar, baking soda, cinnamon, nutmeg, and cloves. Gradually add to pumpkin mixture, stirring to combine. Pour into pans and bake for 1 hour or until toothpick comes out clean. Let cool in pans for 10 minutes. Remove from pans and let cool completely.

In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar.
